Description
Tajima Shuzo is a traditional brewery dating back to the 1840s. Its representative label, βFukuchitoseβ, is brewed using a technique called βyamahai jikomiβ in which steamed rice and βkojiβ are ground until they become porridge-like. Generally, βyamahai jikomiβ is known for creating a strongly acid, heavy flavor that is preferred by βsakeβ enthusiasts, but βFukuchitoseβ is characterized by its elegant scent and the fullness of its flavor.
Nevertheless, the young Toji (Master Brewer) decided to specially craft a sake to be enjoyed Γ la βOn the Rocksβ. This very accessible, easy to drink sake is produced using cherry-blossom yeast, known as sakura in Japanese. Hence the name Sakura Rock.
Just serve on ice in your most fancy spirits glass to enjoy this fragrant aromas and pleasant taste. If you feel 19% is too much of alcohol, take your time, let the ice melt.
